Our story

IT ALL STARTED WHEN…


We first opened behind Cuba Compagnie on Kaya Grandi in 2022, serving Texas BBQ with a Mexican twist. When we left that location and started working from home, we quickly realized something important: our passion for the Mexican kitchen was much bigger than we thought.


After a beautiful trip through Mexico, we came back to Bonaire with a clear mission: bring real, authentic Mexican flavors to the island – of course with a Bonairean twist.


That’s how The Fat Dog – Mexican Foodtruck truly came to life.


After a bit longer than half a year of cooking from home, we got the chance in 2024 to cook from the blue kiosk at Isidel Beach Park, where we served our food for about a year. That little blue spot gave us the opportunity to grow, test, and connect with more people on the island. But we knew pretty fast that we wanted more – more space, more flavor, and a bigger vision. So after a year at the park, we decided it was time to move on and level up.


Today, everything we do starts with that love for flavor. From our beef birria, pescado, chicharrón and vega options, to our fresh homemade salsas and dips, we put time, care and personality into every bite. We mix authentic Mexican recipes with the laid‑back island vibe of Bonaire, so you’ll find not only tacos, but also things like loaded fries, burritos and more, all with that Fat Dog touch.


The Fat Dog is not just about eating, it’s about feeling:
the crunch, the spice, the juiciness, the colors – and that moment you take a bite and think:

“Yes… this is it.”


We love Mexican food, we love big flavor, and we love sharing that with everyone who stops by our truck.
