It started behind Cuba Compagnie, moved into our home kitchen, took shape during a flavor‑packed trip through Mexico, and grew even bigger in the blue kiosk at Isidel Park – until it finally became our pink taco truck. Along the way, that mix of BBQ and Mexico turned into real Mexican flavors, and The Fat Dog – Mexican Foodtruck was born.
